Zucchini Pizza Crust
From: mcrae@cs.ubc.ca (Valerie McRae) 3 cups grated zucchini (medium grater) 3 medium eggs, lightly beaten ⅓ cup whole wheat flour ¼ tsp salt. Press excess liquid from zucchini and place in a mixing bowl. Combine well with eggs, flour and salt. Spread evenly over a well-greased 9x12" baking sheet or a 12" pizza pan. Bake for eight minutes at 450°F to firm. Remove from oven and top with pizza sauce and toppings of your choice. Return to a 350°F oven and bake until sauce is bubbly and cheese is melted (12 - 15 minutes) Serves four to five.
