Toki's Oatmeal Bars (vegan)

1 Cup margarine
1 Cup brown sugar
1 Cup sugar
1 Cup flax/water*
1 teaspoon vanilla
1 Cup flour
1/2 wheat germ
1 teaspoon salt
1 teaspoon baking soda
2 1/2 Cups rolled oats
1 Cup chopped walnuts
3/4 Cup raisins
1/2 Cup chocolate chips    [use carob here instead -- Beth]


Cream the margarine, both sugars and the vanilla together.
Add the flax/water solution and mix well.
Combine the flour, wheat germ, salt, baking soda and rolled oats.
Slowly add these dry ingredients to the wet, mixing completely.
When the batter is homogeneous add nuts, raisins and chocolate chips.
Spread mixture evenly in greased and floured 9" x 13" pan.
Bake at 350 F for 20-25 min.
Cool in pan and cut into bars to serve.


Flax/water mixture is made by taking 1/4 Cup ground flax and 3/4 Cup
water and mixing in a food processor until it forms a bubbly, light
brown slurry.  This usually becomes about 3/4 cup liquid which is the
equivalent of 3 eggs.  This recipe requires an extra 1/4 Cup of flax/
water mixture.  I suggest making 2 batches of 1/4 Cup flax:3/4 Cup water.
