Salmon Loaf

Cook Time: Cholesterol per serving: Marks: INGREDIENTS ------------------------------------------------------------ 1 can Sockeye salmon, about 8-10 ounces 2 ea eggs 1 ea onion, finely chopped salt and pepper to taste 1 1/2 Tbsp lemon juice 12 ea small saltines DIRECTIONS ------------------------------------------------------------ Separate the salmon and remove the backbone. Drain, reserving juice. Separate the eggs. Crush saltines with rolling pin. Mix salmon, saltines, egg yolks, onion, lemon juice, and salt and pepper. Whip egg whites until just stiff, and fold into mixture. If mixture is too dry, add some of the reserved juice. Place in buttered loaf pan and bake at 350 degrees for 45 to 50 minutes. Serve on the side with Salmon Loaf.
