Roughy Gently

                Juice of 1 lemon
4               orange roughy fillets
                Wax paper, cut to fit into saute pan
4       tbsp    butter
1/2     cup     dry white wine

   Rub lemon juice over fillets, cover and place in refrigerator 1 hour.
Saute briefly on each side in butter. Pour on wine and top with disk of wax
paper (foil may discolor the wine). Bake in preheated 350 F. oven just long
enough to make them white through and through, about 8 minutes. Serve with
saffron butter and bouquet of tender vegetables.
