Pumpkin Cookies

1 cup sugar
1/2 cup shortening
1 cup pumpkin
1 tsp. vanilla
1/2 tsp. salt (more or less)
1 cup rice flour
3/4 cup potato flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. cinnamon
1 cup raisins
1/2 cup nuts (optional)

Cream sugar and shortening; add pumpkin, vanilla, and salt.
Sift flours, soda, baking powder and cinnamon. Add to 
creamed mixture. Fold in raisins and nuts. Drop by teaspoonfuls
on greased cookie sheet. Bake at 350 (F) [180 (C)] until done,
about 10 minutes.
