Kathy's Mocha Cake
From: kathy@edsr.eds.com (Kathy Carmichael) 1 chocolate cake mix 1 package chocolate instant pudding 1/2 c. oil 1 c. strong coffee 4 eggs Grease & flour bundt pan. Mix all ingredients at medium spend on mixer for 4 minutes. Warning: this dough is pretty thick and a friend of mine has been know to burn up little hand mixers with this recipe :-) Bake at 350 for 50-60 minutes, or until tests done with toothpick. Cool 20 minutes in pan, invert and glaze (while warm). Mocha glaze =========== 4 Tbls. Corn syrup 4 Tbls. water 1 spoonful instant coffee granules Heat this mixture until boiling. Stir in 1 cup chocolate chips. Mix until smooth and of desired consistency. NOTE: I decided this tasted very boring and like melted chocolate chips (gee, I wonder why? :-) so I mixed in some powdered sugar. Don't remember how much. Just until it tasted more like frosting and less like chocolate chips.
