Mammy's Corn Meal Muffins
From: aem@mthvax.cs.miami.edu (a.e.mossberg) [ adapted from Mabry Mill's recipe flyer] 2 cups white corn meal 1 tsp. sugar 1 tsp. soda 1 egg 1/2 cup flour 1 tsp salt 2 tsps. baking powder 1/2 cup vegetable shortening Mix first four ingredients and add some buttermilkl to make mixture soft. Add remaining ingredients and stir until just mixed. Pour into muffin rings or biscuit pan and bake in hot oven.
