Apple Day Cake
1 cup vegetable oil 1 tsp baking soda 2 cups sugar 2 cups flour 2 eggs, beaten until foamy 4 cups finely chopped, peeled apples 1 tsp vanilla ½ cup chopped nuts and/or raisins (optional) ½ Tbl cinnamon confectioner's sugar ½ tsp salt 1. Preheat oven to 350°F. 2. Grease and dust with sugar a 10 inch bundt pan. 3. Blend oil and sugar; beat in eggs and vanilla. 4. Sift together cinnamon, salt, baking soda and flour. 5. blend the flour mixture into the oil mixture. 6. Stir in apples and nuts/raisins. 7. Bake for 60 to 65 minutes. 8. Cool in pan before unmolding. 9. Before serving, dust top with confectioner's sugar. Hope you enjoy it! Anne
