Tea Loaf

(From _The Food Allergy Cookbook_)

1 cup strong tea
1/2 cup raisins ( or nuts or dates)
2/3 cup rice flour
1/3 cup potato flour
1/2 cup sugar
1 tsp. cinnamon
1 tsp. nutmeg
1/4 tsp cloves
1 tsp baking soda
2 tsp baking powder
1/2 tsp salt
1/4 cup shortening

Add hot tea to raisins and cool. Sift Dry ingredients
and add shortening (cut in finely). Add tea mixture
and stir only until dry ingredients are moistened.
Put in greased small loaf pan and bake at 350 for
40 minutes or until tester put in center comes out clean.
Cool before slicing.
