Vegan Gravy

6 T vegetable oil
4 T flour
1 t seasoning mix (cajun seasoning is good, Mrs. Dash, make up 
    your own)
1 T chopped onion (optional; using it makes the gravy lumpy)
1/2 c vegetable broth 

In a saucepan, heat oil over medium-high heat.  Add flour and 
reduce heat to medium.  Whisk or stir flour constantly until
flour turns the color of light peanut butter.  BE CAREFUL YOU
DO NOT BURN ANY PART OF IT!  (If you do, just start over.  Feel
free to lower heat and work more slowly, or remove pan from
heat when you feel it is getting ahead of you.)  Now add seasoning
mix and onion (if using).  Saute for a few seconds, or if using
onion saute until onion begins to soften.  Note: The liquid in
the onion will cause the mixture to get "gummy" but that's OK.

Now add vegetable broth and whisk/stir until mixture is smooth
and liquid is fully incorporated.  Add a bit more broth or water
if gravy is too thick.  Simmer for a minute or so.  Serve.
This is probably enough for about 2 people (or 1 person if you
are from the south and eating the gravy on your rice).
