Tofu Patties

1/2	onion minced
1	stalk celery, finely chopped
1/2	green pepper, finely chopped
2	tablespoons oil
1	package tofu (About 20 ounces)
1	egg, beaten
2	tablespoons whole wheat flour
2	tablespoons soy sauce
1/2	cup grated cheddar cheese
	wheat germ

Chop the onion, celery and green pepper fine and saute in oil until
soft.  Drain the tofu in a strainer; then mash it with a fork and mix
in the egg, flour and soy sauce.  Add vegetables and the cheese.  Form
into small patties and roll them in the wheat germ.  Brown on a griddle
or skillet, or bake in a 350 degree oven.

Makes about 2 dozen
