Sunrise Muffins

Preheat oven to 350 degress F.

4 eggs                          Beat eggs wel

2/3 c sunflower oil             Add to beaten aggs and mix together
1 1/2 C apple cider or juice    thoroughly.
1 C grated carrots
1/2 C raisins

2 C unbleached white flour      Mix well in a separate bowl.  Add
1 C whole wheat flour           to wet mixture, combining just until
1/2 C shredded coconut          dry mixture is absorbed.  Grease muffin
1/2 C chopped raw almonds       tins generously, or line with paper
2 1/2 tsp. cinnamon             muffin cups.  Divide the batter equally
2 1/2 tsp. baking powder        amonst the cups.  They will be heaped
                                higher than the rim.

                                Bake for 20-25 minutes.  The muffins
                                should be toasty brown on top.
