Carrot Cake 2

From the New Farm Veg Cookbook:

Preheat oven to 350.

1 c salad oil
1 c white sugar
1 c brown sugar  
1 1/2 c soymilk, water, or if you prefer, cow's milk
4 c white flour
2 t baking powder
2 t baking soda
1 t salt (I consider this opt.)
1 1/2 t cinnamon
1/2 t allspice
3 c grated raw carrots
1 c chopped nuts (opt.)
1/2 c raisins (opt.)

(Note: 2 c brown sugar may be subsituted for the 1 c white/1 c brown)

Blend oil and sugar, add water and beat.  Sift flour with remaining 
ingredients and add to sugar mixture.  Add carrots and nuts and mix well.
Bake in 3 oiled and floured layer pans or one 9 x 13" cake pan at
350 for 35-40 minutes.  (Baking time may be less if using small round
pans).
