Beth's Raisin Pie
From: bfreeman@bronze.ucs.indiana.edu (Elisabeth Freeman) 2 teaspoons grated lemon rind (lemon zest) 1/2 + 1/3 cup lemon juice 1 cup packed brown sugar 2 tablespoons white sugar 2 cups raisins 1 1/4 cups water 1/4 cup plus 2 tbl. flour 1/2 cup water 1 cup small pecan pieces 1 nine inch pie crust Topping (for lacto's) 3/4 cup flour 3 tbl butter 1/2 cup brown sugar Mix the first 6 ingredients in a pan. Bring to a boil, stirring all the time, then lower heat. Mix flour and water until smooth and add slowly to the pan. Cook 5 minutes until very thick. Stir in pecan pieces, Pour into pie crust. Add topping if you are lacto-veg. (Topping: cut together the ingredients until it's all crumbles) Cook 40 minutes - 15 at 400, 25 at 300.
