Banana Bran Muffins

1 cup whole wheat flour (or white flour, if you insist)
1 cup bran
1 Tablespoon baking powder
1/4 teaspoon salt
3-4 very ripe bananas, mashed
milk or soy milk (see below)
1 egg, lightly beaten
1 Tablespoon oil (optional)

Mix the dry ingredients.  Add enough milk or soy milk to the bananas to
make 1 1/2 cups total.  Add the oil (if used) and egg to this.  Pour the
wet ingredients over the dry, and stir just till mixed.  Spoon into 12
greased (or Pammed) muffin tins.  Bake at 400 F. for about 20 minutes.
Remove from tins while hot.

Note:  Since I'm always trying to save on calories I eliminate the oil.
It doesn't seen to make much difference.  The muffins are moist if you
don't overbake them.  The sweetness of the bananas eliminates the need
for sugar.
