Acadian Sugar Pie

(From Canadian Living's Country Cooking Cookbook)

This sugar pie is rich and sweet and is best served in very small
wedges topped with whipped cream.

Ingredients:
  Pastry of 9-inch single-crust pie.
  2 cups packed brown sugar
  2 tbsp all-purpose flour
  pinch salt
  2 eggs
  1 egg yolk
  1 cup milk
  1 tsp vanilla

On lightly floured surface, roll out pastry and fit into
9-inch pie plate; trim and flute edge.

In bowl, blend sugar, flour and salt.  In separate bowl,
beat eggs and yolk until frothy; beat in milk and vanilla.
Stir into sugar mixture until smooth.

Pour into pie shell.  Bake at 400F oven for 10 minutes;
reduce heat to 350°F and bake for about 35 minutes longer
or until crust is golden brown and filling is set.
Makes 6 to 8 servings.
