Beth's Peanut Butter cookies (first attempt)
From: bfreeman@bronze.ucs.indiana.edu (Elisabeth Freeman) 1 cup unbleached white flour 1 cup whole wheat flour ½ tsp baking soda 1¼ cups natural peanut butter ⅔ cup honey ⅓ cup brown sugar ¼ cup ground flax (from about 1/2 cup flax seed) ¾ cup water Preheat the oven to 350°F. Mix the ground flax and water and have someone stir it with a whisk while you mix the other stuff. Mix everything else together. I had to do this by hand as it was too stiff for my mixer. Add the ground flax and mix it up more. Make small balls and put them on a cookie sheet (I used Pam to keep from sticking) and squish down with a fork. Cook for 15 minutes. I liked the way these came out, although one person who tried them said they came out like a muffin rather than a cookie, perhaps because I used whole wheat flour. Also they aren't as sweet as some cookies, but I like that as I find many cookies too sweet. Thanks to Toki for the flax idea - it worked great!!!
