Banana walnut cake
This is VERY easy, and VERY good! Mix everything in the same bowl (I use a wisk to get out the lumps but the batter is kind of thick) 1 1/4 cup sugar 1/2 cup veg oil 2 eggs 2 mashed bananas (ripe) 1 1/2 teaspoon vanilla 1 cup buttermilk or sour milk (not bitter milk!) 1 teaspoon baking soda 2 cups flour 1 teaspoon baking powder 1 cup finely chopped walnuts (the original recipe calls for black walnuts, but who has a cup of black walnuts?) bake at 350 in a 9X13 inch pan for about 35 minutes- until the top is brown and springs back when touched. This cake needs no frosting!
