Apple Cinnamon Popovers
Ingredients 1 Cup thawed frozen egg substitute or 4 real eggs ¾ cup all purpose flour ½ cup applesauce (no sugar added) ⅓ cup low fat buttermilk (1% milk fat) 2 tbsp plus 2 tsp reduced calorie margarine (tub melted and cooled 1 teaspoon ground cinnamon ¾ teaspoon granulated sugar ¼ teaspoon bakong soda Preheat oven to 450°F Spray four 10 ounce custard cups with non stick cooking spray. Set aside. (Regular muffin tin will give 8 muffins) In blender process all ingredients until smooth, fill cups, set muffin tin on baking sheet in middle of centre of oven rack for 25 minutes until puffed and golden brown. (I checked on them at 20 minutes.) Use knife to pierce top of each popover to allow steam to escape. Bake for five minutes longer. Enjoy. Is nice with jam on top.
